Sarson Ka Saag (Mustard Greens)
Sarson Ka Saag with warm roti lathered in ghee is my favorite! Mustard greens are pungent, bitter, and heating. They gently warm up and stimulate digestion while also drying out excess kapha (mucus) on the tongue and in the stomach. This dish is often cooked with tomato, onions, and garlic, but it is not recommended to use these foods on a regular basis. Tomatoes, onions, and garlic are rajasic in nature which means they create agitation and irritation in the mind and body. This recipe is simple, mild, gentle, and comforting.
2 lbs. mustard greens (cleaned and chopped)
1 lb. spinach
1 tbsp. Ghee
1 tsp. Cumin powder
2 tbsp. Chickpea flour
