Paneer Bhurji (Fresh Homemade Cheese Scramble)

Ingredients

1/2 qt organic milk (preferably non homogenized)

I/2- 3/4 cup vinegar

I sweet onion (chopped)

1 small tomato (chopped) optional

1 tsp turmeric powder

1/2 tsp cumin powder

1/2 tsp coriander powder

1/2 tsp ginger

Ghee

  1. Bring milk to a boil until you start to see steam and bubbles form. Add vinegar into the milk. The milk will start to separate into curds. Use a cheese cloth to strain out the liquid. Squeeze as much of the liquid out. Flatten the cheese onto a plate and cut in small cubes or pieces.

  2. In a pan, heat some ghee on low-medium. Add onions and cook until translucent. Add tomatoes. Add spices and then the paneer. Add salt.

  3. Garnish with cilantro.
