Sautéed Pumpkin
When the weather turns cold, our bodies can also reflect the same qualities of increased dryness, cold hands and feet, and dry and harder to pass stool. For support, it can be helpful to eat foods which are warming, grounding, and moistening such as a sauté or soup made with root vegetables and good fats like ghee, avocado, or cream. As always, buy organic or politely ask your local farmer about how they care for their soil and produce so you can support your health as well as the earth herself.
1 butternut squash
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp red chili powder
1/2 tsp turmeric
pinch of asafoetida
Coriander leaves
Ghee
Cut squash into small cubes. Heat oil on pan and add mustard and cumin seeds. Once the seeds begin to pop, add cubes. Gradually add water, cover the pan, and place on low to medium heat. Cook until squash is slightly soft then add remaining spices. Mix well. Garnish with coriander leaves.
