Soothing Split Pea Soup

Split Green Pea Soup

1/2 cup split green peas (soaked overnight)
1 cup chopped fennel bulb
1 tblsp ghee
1 tsp black pepper
1 tsp grated ginger
1 tsp cumin seeds
1/2 tsp mustard seeds
1/2 tsp turmeric
Salt

Heat 1 tsp. ghee in a pot on medium heat. Add 5 cups of water and split peas. Cover and cook for 20-30 minutes. When peas are done, warm ½ tsp. ghee in a pot over medium heat. Add mustard seeds, fresh ginger, cumin, turmeric, and black pepper. Add peas and fennel bulb into the pot and close the lid. Cook until fennel is slightly tender. Enjoy with homemade roti’s and yogurt!
