Aloo Gobi Sabzi- Sautéed Potato Cauliflower

Cauliflower is becoming a trending food star. Cauliflower pizza, cauliflower rice, cauliflower wings, cauliflower tacos, and so on. This cruciferous vegetable can actually create serious bloating without proper cooking so cook it with some heating spices like mustard seed or black pepper to make it easier to digest. 3-4 cups cauliflower and potatoes
1/2 inch ginger
2 Tbs Shredded coconut
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1/4 tsp turmeric power
3-4 curry leaves
Pinch of Hing
Handful of cilantro leaves
Safflower oil
Salt
2-3 cups water

Wash and cut vegetables into small pieces. Heat pan with oil, once heated add cumin and mustard seeds and hing. Mix until the seeds pop (make sure to put gas on medium heat so seeds don’t burn). Add turmeric and then gradually add the vegetables. Mix well, then add water and salt. Place a lid over the pan for cooking until the vegetables turn soft. Garnish with cilantro and shredded coconut. Serve with Roti and Dal.
